Maple Bilberry Cornbread Muffins Recipe

One was for just plain cornbread from Joy of Cooking and the other was from a Vermont Maple Syrup cookbook for a maple cornbread. Ingredients

1 1/4 cup corn meal

1 cup whole wheat flour

3 tsp baking powder

1/2 tsp salt

1 egg, well beaten

1/2 cup maple syrup

3/4 cup milk

3 tbsp melted butter or margarine

1 cup bilberries

Directions

Mix the dry ingredients together.

Stir in the other ingredients until well blended but don't beat.

Grease a muffin pan and pour batter into the muffin pan.

Fill about 2/3 full.

Bake for about 20 minutes at 400 degrees.

Recipe makes 12 muffins.
