Maple Bilberry Cornbread Muffins

As I had cornmeal, maple syrup and bilberries handy I decided to combine two recipes. One was for just plain cornbread from Joy of Cooking and the other was from a Vermont Maple Syrup cookbook for a maple cornbread. Ingredients
- 1 1/4 cup corn meal shopping list
- 1 cup whole wheat flour shopping list
- 3 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1 egg, well beaten shopping list
- 1/2 cup maple syrup shopping list
- 3/4 cup milk shopping list
- 3 tbsp melted butter or margarine shopping list
- 1 cup bilberries shopping list
How to make it
- Mix the dry ingredients together.
- Stir in the other ingredients until well blended but don't beat.
- Grease a muffin pan and pour batter into the muffin pan.
- Fill about 2/3 full.
- Bake for about 20 minutes at 400 degrees.
- Recipe makes 12 muffins.
