Minted Watermelon Soup

- 2lbs roughly chopped fresh, watermelon shopping list
- about 4-6 medium/large fresh mint leaves shopping list
- 1/2t kosher or sea salt shopping list
- juice from 1/2 lemon shopping list
- 2T honey shopping list
- 1 cup half and half shopping list
How to make it
- Place all ingredients other than half and half in blender or food processor.
- Process until melon is chopped and all ingredients are well blended.
- Add half and half and pulse a few more times just to combine.
- Chill for at least 1 hour.
