How to make it

  • In a large soup pot, heat the olive oil over medium heat and saute the onion for 5 mins.
  • Add in the garlic and cook, stirring, for 3 mins.
  • Mix in the tomatoes, broth, water, black beans, lime juice, sherry, spices, and herbs well.
  • Bring to a high simmer.
  • Cover and lower the temp to medium before simmering for 10 mins.
  • Continue to simmer on low heat for 10 mins.
  • When soup is done, spoon it into bowls and put a scoop of brown rice into the center of the bowl. Garnish with chopped scallions, lime wedges, and avocado slices. Best served with hot rolls on the side.

    That sounds so hearty and delicious - will be making this when the weather cools off again and the nights are crisp...nothing like a good bowl of soup to warm you up!
