Black Bean Soup With Lime

- 2 T olive oil shopping list
- large, diced red onion shopping list
- 5 minced garlic cloves shopping list
- black pepper shopping list
- 1/2 head freshly chopped parsley shopping list
- 1/2 head freshly chopped cilantro shopping list
- 1/4 tsp cayenne pepper shopping list
- 1 tsp cumin shopping list
- 1/4 cup cooking sherry shopping list
- juice from 2 limes shopping list
- 4 drained, rinsed 1-lb cans of black beans shopping list
- 1/2 cup water shopping list
- 2 cups vegetable broth shopping list
- 1 can (14 oz) diced tomatoes shopping list
- 2 cups cooked brown rice shopping list
- 1 bunch chopped scallions shopping list
- 1 lime cut into wedges shopping list
- 1 avocado, cut shopping list
- crusty rolls shopping list
How to make it
- In a large soup pot, heat the olive oil over medium heat and saute the onion for 5 mins.
- Add in the garlic and cook, stirring, for 3 mins.
- Mix in the tomatoes, broth, water, black beans, lime juice, sherry, spices, and herbs well.
- Bring to a high simmer.
- Cover and lower the temp to medium before simmering for 10 mins.
- Continue to simmer on low heat for 10 mins.
- When soup is done, spoon it into bowls and put a scoop of brown rice into the center of the bowl. Garnish with chopped scallions, lime wedges, and avocado slices. Best served with hot rolls on the side.
