Ingredients
  • 20 ounces frozen chopped spinach thawed
  • 1 tablespoon butter
  • 1/2 tablespoon olive oil
  • 1 shallot diced
  • 1 clove garlic minced
  • 3/4 cup heavy cream
  • 1/8 teaspoon nutmeg freshly ground or grated
  • 1/2 cup parmigiano reggiano freshly grated
  • 1/2 cup Romano freshly grated
  • 2/3 cup fontina shredded
  • 2/3 cup panko
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Preheat oven to 450.
  2. Lightly grease a glass or ceramic loaf pan.
  3. Mix together all of the different cheeses then set aside.
  4. Heat a large pan over medium heat.
  5. Add the butter and olive oil.
  6. Once the butter has melted and the oils are hot add the shallot and garlic to the pan.
  7. Sweat the shallot and garlic for 5 minutes.
  8. Add the heavy cream and nutmeg to the pan and raise the heat to medium high.
  9. Allow mixture to reduce for 5 minutes.
  10. While cream is reducing place thawed spinach into a clean dish towel and ring out as much of the water as you can.
  11. Add the spinach, nutmeg and 1/2 of cheese mixture to the reduced cream.
  12. Stir to combine then season with salt and pepper.
  13. Pour the creamed spinach into the greased loaf pan.
  14. Sprinkle remaining cheese mixture evenly over the top of the spinach then do the same with the panko.
  15. Bake at 450 for 15 minutes.

Wow what is up with you chefmeow? Cheese glorious cheese. I bet the nutmeg really kicks it up a notch too. I bow to you oh mighty one. I'm trying this one ASAP.


LOL. I guess I am on a cheese kick. Posted 100 on my website today and decided to pick out a few here. Yummo.............


I made this for dinner. My kid's ate their biggest vegetable serving yet. Everyone loved it. I served it with the "Hamburger helper from scratch" recipe. Perfect comfort food meal.


This was yummy. I doubled the receipe and made in a glass sheet cake dish. Rather than spread out, I mounded in the middle (it was about 2 inches thick. This was wonderful because the cheese spread out around the sides and turned into crisps. I also added a cup of sliced mushrooms (steamed first to shed the water).

This dish also makes wonderful leftovers.

Yummy!


Love the panko additon. Very good stuff.
