How to make it

  • Preheat broiler ( i have done this on the grill and it is great)
  • Combine first 6 ingredients in large bowl. Add chicken to bowl;toss to coat. Place chicken on broiler pan coated with cooking spray. Broil chicken 5 mins on each side.
  • Combine honey and vinegar im small bowl,stirring well. Remove chicken from oven;brush 1/4 c honey mixture on chicken. Broil 1 min. Remove chicken from oven and turn oveer. Brush chicken with remaining honey mixture. Broil 1 additional min or till chicken is done.

    I wanted some chicken for the week to jazz up my green salads to make them a meal and I think this will do the trick. I didn't have ground red pepper and that's just fine with me. I used 1 tsp of chili powder and 1 tsp of chipotle chili powder. I also used smoked paprika. This was spicy enough for me as I made it without ground red pepper. I had five thighs and the rub mixture just covered them. I don't know if there is enough for eight unless they are small ones. I baked these at 350F for 40 minutes, put the honey stuff on and then broiled as directed. I cooked the thighs on oven sprayed foil for quick cleaning. These are going to be great on my dinner salads. Thanks again, Pat.
