Brussels Sprouts with Walnuts Bacon and Blue Cheese

- 1-1/2 pounds Brussels sprouts trimmed and halved shopping list
- 3 ounces crumbled blue cheese shopping list
- 4 thick slices bacon shopping list
- 2/3 cup spiced walnuts crumbled shopping list
- 1 tablespoon peanut oil shopping list
- 1-1/2 tablespoons red wine vinegar shopping list
- 1 teaspoon kosher salt shopping list
- 1 teaspoon fresh cracked black pepper shopping list

- 2/3 cup walnuts shopping list
- 1 tablespoon molasses shopping list
- 1/2 teaspoon granulated sugar shopping list
- 1/4 teaspoon ground cardamom shopping list
- 1/4 teaspoon ground cumin shopping list
- 1/4 teaspoon cayenne shopping list
- 1/2 teaspoon kosher salt shopping list
- 1/8 teaspoon fresh cracked black pepper shopping list
- 1 tablespoon peanut oil shopping list
- 1-1/2 tablespoons red wine vinegar shopping list
- 1 teaspoon kosher salt shopping list
- 1 teaspoon fresh cracked black pepper shopping list
How to make it
- Heat a large skillet over medium heat.
- When hot add bacon and cook until most of the fat has rendered out and is crispy.
- Remove bacon and drain on paper towels
- Crumble once cooled.
- Drain off all but one tablespoon of bacon fat from the skillet then add the peanut oil to the remaining bacon fat and turn the heat to medium then add brussels sprouts and toss to coat with oil then season with salt and pepper.
- Sauté brussels sprouts for 15 minutes or until the sprouts are tender and caramelized stirring occasionally.
- Deglaze pan with the red wine vinegar stirring and scrapping the bottom of the pan with a wooden spoon to get up all those yummy caramelized bits on the bottom of the pan.
- Add the crumbled bacon and spiced nuts to the pan and stir.
- Add the bleu cheese then immediately remove the sprouts from the pan.
- Serve hot or at room temperature.
- To make the spiced nuts preheat oven to 325.
- In a small mixing bowl stir together all the dry spices then stir in molasses then add walnuts.
- Toss mixture to coat the nuts.
- Spread walnuts out in a single layer on a baking sheet and bake for 15 minutes.
- Stir the nuts half way through cooking.
- Remove from oven and allow nuts to cool.
