Fully Adjustable Sausage And Potatoes Recipe
I have used this recipe countless times through the years, as it is one of my husband's favorites. You can adjust any ingredient to your taste and not hurt the overall effect. This is a modification of a recipe from a Land o Lakes cookbook.

Ingredients
  • 1-2 Tablespoons oil
  • 3 cups red potatoes, cut to pieces less that 1"
  • Dash powdered thyme
  • Dash black pepper
  • Butter-flavor Pam (opt.)
  • 1-1/2 to 2 lb. sausage such as Italian or Polish (we like Polish best)
  • 1 cup chopped onion
  • 1 cup diced green pepper
  • Parsley to taste (if fresh, don't use much)
  • Dash salt (opt.)

Directions
  1. Heat oil over medium-high heat in large skillet.
  2. Place potatoes in skillet; sprinkle thyme and black pepper over potatoes. Cook about 10 minutes, stirring occasionally.
  3. May spray with a little butter Pam if using.
  4. Add sausage; cook 10 minutes.
  5. Stir in green pepper and cook 3 minutes.
  6. Add onions and just let them sit on top until you have to stir. Cook 5-10 minutes, depending on how soft you like them.
  7. When almost done, add parsley and stir.
  8. If you like less sausage, you may have to add salt instead.
  9. Do not overcook, as it becomes tasteless and greasy.
  10. Cook times are approximate, depending on the potatoes and sausage you use.
