How to make it

  • Heat oil over medium-high heat in large skillet.
  • Place potatoes in skillet; sprinkle thyme and black pepper over potatoes. Cook about 10 minutes, stirring occasionally. May spray with a little butter Pam a couple times if using.
  • Add sausage; cook 10 minutes.
  • Stir in green pepper and cook 3 minutes.
  • Add onions and just let them sit on top until you have to stir. Cook 5-8 minutes, depending on how soft you like them.
  • When almost done, add parsley and stir.
  • If you like less sausage, you may have to add salt instead.
  • Do not overcook, as it becomes tasteless and greasy.
  • Cook times are approximate, depending on the potatoes and sausage you use.
