Green Rice

- 1 cup green onions, chopped shopping list
- 3/4 cup bell pepper, diced shopping list
- 3 tablespoons vegetable oil shopping list
- 1 cup rice shopping list
- 1/4 cup parsley, chopped shopping list
- 3 cups chicken broth shopping list
- 1 teaspon salt shopping list
- 1/2 teaspoon black pepper shopping list
- 1 fresh or 2 canned jalapenos, chopped shopping list
How to make it
- Cook onions and bell pepper in oil until soft.
- Add rice, parsley, chicken broth, salt, pepper and jalapenos. Mix well. Pour into a 2 quart dish with lid. Cover and bake at 350 degrees for 30 to 40 minutes until rice is done and liquid is absorbed. Toss with a fork and serve.
