How to make it

  • Boil water, salt and cook pasta until El dente.
  • While pasta is cooking make topping in large bowl.Chop tomatoes and basil put in bowl and add in salt, minced garlic, and olive oil.Let sit for 5-8 minutes to absorb.
  • Drain pasta, plate, and add scoop of topping. Toss and garnish with fresh grated cheese.

    This was a quick weeknight dinner for this working girl. It also made me feel like I was having a healthy pasta dish when I had a craving for some pasta. My tomato mix sat while the pasta boiled which was nice for me because I like to multi-task. It was kinda hard keeping the slippery tomatoes on the fork with the slippery pasta but I managed to eat up. I put the cheese on the hot pasta so it would melt a bit and then piled on the tomatoes. I added a picture and a thread in IMI 3/19/14
