How to make it

  • Cook macaroni in boiling water until done.
  • Drain macaroni and rinse in cold water. This keeps the macaroni from cooking further in the oven.
  • In a pot over medium heat, melt butter.
  • After the butter melts, add enough flour to make a paste.
  • Add milk and whisk until smooth.
  • Cook mixture until thickened. Continue to add milk until it's the consistency of cheese sauce or gravy.
  • Add cheeses and stir until melted.
  • Add a couple of drops of Tabasco, a small amount of mustard and salt and pepper to taste.
  • Pour into casserole dish and bake at 350 until browned and bubbly.
