Ingredients

How to make it

  • Preheat oven to 350 degrees.
  • Grease a bundt pan and dust with 1/4 cup sugar - this will give a nice crispy coating to the cake.
  • Cream butter, sugar and eggs until fluffy.
  • Add rum.
  • Add mashed bananas, mix well.
  • Gradually add dry ingredients, a little at a time.
  • Blend until nice and mixed with a good "cake consistency."
  • Bake one hour, or until a toothpick comes out clean.
  • Set your timer for 10 minutes and then turn the cake out onto a cake plate and allow to cool completely before serving.
  • Sprinkle with powdered sugar or serve with rum/cinnamon infused whipped cream.

    Lovely flavor, not cloyingly sweet. The cake rose as beautifully as in the photo. I dusted it with powdered sugar and scattered raspberries around the cake stand for a bit of color. GORGEOUS and well-enjoyed by our dinner guests.

    OK... I baked the cake, with flour ;-). It rose exquisitely and the batter tasted lovely, not cloying and very clean with the rum aftertaste. My husband used restraint and didn't cut into it. I am serving this at my weekly extended family dinner party here tomorrow and think I'll fill the center with raspberries for color after I dust the cake with confectioner's sugar. Really nice recipe, thanks for sharing it with us.

    What a moron!! Of course there is flour..I'm not sure how I omitted that!!! The recipe has been changed... sorry all!

    Just got my Cooking Light magazine today and there is a recipe for Bananas Foster Bread, and btw, Borinda, it does include flour. I'm guessing that my neighbor inadvertently left the flour out.

    My husband loves when I bake my banana cake for him. This is a fun twist on the conventional so I will bake it this weekend and expect to be left with crumbs if he doesn't lick the platter. QUESTION: what, no flour? Your photo makes me feel the posted recipe doesn't have enough in it to rise that high and not fall.
