How to make it

  • In a large frying pan bring the milk to a steady simmer with the bay leaf, salt and peper
  • Add the haddock, pollock prawns, squid, onions, garlic and mushrooms to the milk and continue simmering until the fish is cooked
  • Whilst you are doing this boil the potatoes in salted water, once they are cooked mash them up with butter, milk, salt and pepper until smooth and creamy
  • Now remove the fish, onions, garlic and mushrooms from the milk and put in a large oven-proof dish (take out the bay leaf too and throw away)Flake the fish into smaller pieces and check for small bones
  • Add the sweetcorn and the 2 hard boiled eggs that have been cut into quarters
  • Now make a rue using the plan flour and butter, cook out for a few minutes
  • Slowly add the milk that the fish has been poached in to make a smooth white sauce (stirring at all times)
  • Add the cheese and 1 table spoon of finely chopped flat leaf parsley to the white sauce, stir and pour over the fish, vegetables and eggs
  • Now cover with the creamy mashed potatoes, leave the top of the pie nice and bumpy and sprinkle with a bit of grated cheese
  • Put in the oven (180 degrees) for appox 30 minutes
  • Serve with a lovely crispy salad

Going to have to use snapper rather than Haddock and octopus in place of squid (that's Samoa) but I think it will still be a 5.
