Native Princess Chicken Paprikash

- 1 cut up chicken (2-3 lbs) (Or your favorite pieces) shopping list
- 1 tbsp extra virgin olive oil shopping list
- 1 cup chopped onion shopping list
- 1 tbsp smoked paprika (I love the stuff, so I add a little more) shopping list
- 1/4 cup white wine shopping list
- 1/4 cup vegetable broth (you can use chicken broth) shopping list
- 1/2 cup sour cream shopping list
- Cooked buttered egg noodles (cook pasta when chicken is almost done) shopping list
- 1 tbsp chopped parsley, for garnish shopping list
How to make it
- In a large skillet, heat olive oil and brown chicken. Season with salt & pepper. Remove chicken and set aside.
- Add onion to skillet, cook until tender. Stir in paprika. Return chicken to skillet, turning to coat with onion & paprika mixture. Add wine & broth. Bring to a boil, reduce heat, cover & simmer until chicken is fully cooked, 40-50 minutes. Remove chicken & keep warm.
- Reduce skillet drippings to about 1/2 cup liquid, about 3-5 mionutes. Stir in sour cream, heat through. Serve on top of cooked egg noodles, sprinkle with parsley.
