How to make it

  • Preparation:
  • Preheat oven to 375 degrees
  • Brush muffin tins with oil. Place the eggs, flour, salt, pepper, thyme and nutmeg in a blender, blend until well combined, scrape down sides. With machine running, slowly pour in the milk and cream. Blend until smooth. Place muffin tins in oven to warm. Remove tins and fill halfway with batter. Place a piece of the cheese in the center of each cup. Pour in the remaining batter to fill each cup 2/3. Bake the popovers until puffed and golden, 30-40 minutes.

    This was my first experience making popovers and I think they turned out well. I cut the recipe down to one third and baked them in my muffin tin b/c I don't have have a popover pan. I also used garlic & herb cheese. They were very good the evening I made them but didn't care for them the next day (not even sure if they're meant to be saved but couldn't eat them all up in one night between just the two of us). Thanks for this nice recipe!
