Open-Face Plum Cake

- 1-1/2 c flour shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 3/4 c plus 1 TB sugar shopping list
- 1/2 c whole milk(I used 2%) shopping list
- 1/4 c vegetable oil 1 large egg shopping list
- 9 or 10 large black plums,halved and pitted shopping list
- 1/4 tsp ground cinnamon shopping list
- 2 TB cold unsalted butter,cut in small pieces plus more for pans. shopping list
How to make it
- Preheat oven to 400'
- Butter two 9" round cake pans. Whisk together flour,baking powder and salt . In seperate bowl, combine 3/4 c sugar,milk,oil and egg. Fold into flour mixture
- Divide batter evenly between prepared pans and smooth tops. Arrange plums,cut sides up,over batter.
- Combine cinnamon and remaining sugar and sprinkle over plums Dot with butter. Bake till tops are golden brown,plums are soft and toothpick in center comes out clean,30-35 mins. Let cool (Cakes are best the day you make them:leftover cake is good for breakfast the next day)
