Buffalo Chicken Macaroni And Cheese

- 1 pound elbow macaroni, cooked al dente and drained shopping list
- 4 tablespoons butter, divided shopping list
- 2 tablespoons flour shopping list
- 2 teaspoons dry mustard shopping list
- 2-1/2 cups milk (I used fat free super skim) shopping list
- 3/4 cup hot sauce (Franks®, divided shopping list
- 1 pound processed cheese (I used light Velveeta®) shopping list
- 4-8 ounces shredded pepper jack cheese (use this to taste) shopping list
- 2/3 cup sour cream (I used light) shopping list
- 1 small onion, chopped finely shopping list
- 2 stalks celery, chopped finely shopping list
- 2 cloves garlic, minced shopping list
- 3 cups cooked chicken, shredded shopping list
- 1 cup panko breadcrumbs or italian seasoned shopping list
- 1/2 cup blue cheese, optional shopping list
How to make it
- Preheat oven to 350 degrees and spray a 13x9 dish with non-stick cooking spray.
- FOR THE CHEESE SAUCE:
- Melt 2 tablespoons butter in saucepan over medium heat.
- Stir in flour and dry mustard.
- Whisk in milk and 1/4 cup hot sauce; stir until thickened.
- Stir in cheeses, and remove pot from heat when melted.
- Whisk in sour cream and set aside.
- FOR THE CHICKEN:
- Melt 2 tablespoons butter in a medium skillet.
- Add the onion and celery and cook until soft.
- Stir in the garlic and chicken and cook a minute or two.
- Add in remaining 1/2 cup of hot sauce, and stir until slightly thickened.
- In the pot you boiled the pasta in, combine the pasta and chicken mixture; stir.
- Add in cheese sauce and stir to combine well.
- Pour into prepared baking dish,
- Sprinkle with breadcrumbs and blue cheese, if using.
- Bake for about 30 minutes, until browned and bubbly.
- Allow to set 10 minutes before serving.
