Devonshire Honey Cake

- 1 cup unsalted butter shopping list
- 3/4 cup clear honey shopping list
- 1/2 cup brown sugar shopping list
- 3 eggs, beaten shopping list
- Finely grated zest of one orange shopping list
- Generous 2 cups of self-rising flour shopping list
- 1/2 cup pine nuts shopping list
How to make it
- Preheat the oven to 325F. Grease and flour a deep 8-inch round cake pan.
- Put the butter, honey and brown sugar in a sauce pan and heat gently, stirring,
- until the butter has melted. Increase the heat and bring to the boil, then boil for 1 minute. Remove the pan from the heat and set aside to cool. (I speed up the cooling phase by placing the sauce pan in a bowl of ice water.)
- Beat the eggs and orange zest into the honey mixture. Sift the flour into a bowl and gradually beat in the honey mixture until smooth and well mixed. Pour the mixture evenly into the prepared pan and sprinkle the pine nuts over the top.
- Bake in the oven for 50-60 minutes, or until firm to the touch. Cool in the pan for 5-10 minutes, then turn out onto the wire rack and leave to cool completely. Serve in slices.
- NOTE: For a change, try using lemon zest instead of the orange and use slivered almonds in place of the pine nuts.
