Ingredients

How to make it

  • Heat oven to 450 degrees
  • In a bowl, gently toss bread cubes with 1 T oil.
  • Season with salt and pepper to taste
  • Arrange bread in a single layer on baking sheet and bake 10 minutes in preheated oven
  • Transfer to a large casserole dish that has been sprayed with cooking spray
  • In a large skillet over medium-high heat, heat remaining oil, add onion,peppers and mushrooms
  • Cook for 5 minutes
  • Add cubed chicken and cook for about 5 minutes or until chicken is browned
  • Stir frequently
  • Stir in italian herbs, crushed tomatoes and vinegar
  • Increase heat to high and bring to a boil
  • Reduce heat to medium and let simmer 5 minutes
  • Spoon chicken mixture over bread in casserole dish
  • Top with mozzarella and sliced tomatoes
  • Bake for 15 minutes @ 400 or until heated through

    Just uploaded a pic. It was wonderful!!! I've always enjoyed scalloped tomatoes so found this to be a super meal. I cheated a bit by using day-old white bread instead of french, and fire-roasted diced tomatoes instead of crushed, plus just a pinch of brown sugar (because I ALWAYS add a little sugar to tomatoes!). Thanks for a great keeper recipe!
