Ingredients

How to make it

  • Place chicken & artichokes in a bowl. Add mayo, 1/2 cup Parmesean & jalapenos. Mix carefully until chicken & artichokes are covered with mayo. Add salt & pepper to taste.
  • Place mixture in baking dish, top with sliced olives. Sprinkle with the rest of the Parmesean.
  • Bake in preheated oven for 50 minutes, until cheese is golden brown.
  • Enjoy warm or cold!

    Whoa there! I like the idea of making it into a spread for a party. As is it's just too spicy for a main dish - at my house, anyway. Does sound like it'd go fast on a party table, though!

    Think I will downsize the peppers and add a zip of lemon. Great for a quick hot meal on a cold day. Love it.

    I would love to make this but my beau would not go near it, between the artichoke, olives, and jalapeno he'd turn and walk out the door. I, on the other hand rather enjoy those items! ;-) maybe one day for lunch with my sister or something...
