How to make it

  • Soak and rinse beans.
  • Put in stock pot with onions garlic and seasonings, water and v-8.
  • bring to boil and reduce to simmer.
  • cook gently, checking liquid level until beans are tender, about two hours or so,
  • Add sausage, the liquid smoke and heat until sausages are warmed through.
  • Usually use a ham hock or ham bone, but alas, there was none to be found, so this became the not-so Senatorial bean soup.
  • Good with pumpernickel bread and butter.
