Not So Senatorial Bean Soup

- 1 lb. white beans, washed picked over and soaked. shopping list
- 2 medium yellow onions chopped shopping list
- 3 cloves of garlic minced shopping list
- 4 cups of water or more if needed shopping list
- 1 can of v-8, low sodium shopping list
- 3 carrots, cleaned and chopped shopping list
- 2 chicken boullion cubes shopping list
- 1 bay leaf shopping list
- 1/2 teaspoon dried thyme shopping list
- fresh ground pepper shopping list
- 1/4 to a 1/3 tsp of ground cloves-light touch here shopping list
- 8 -9 passes of a fresh nutmeg over microplane shopping list
- 1/4 tsp of ground ginger shopping list
- 2 smoked sausage links cut in coins shopping list
- 3 shakes of liquid smoke. shopping list
How to make it
- Soak and rinse beans.
- Put in stock pot with onions garlic and seasonings, water and v-8.
- bring to boil and reduce to simmer.
- cook gently, checking liquid level until beans are tender, about two hours or so,
- Add sausage, the liquid smoke and heat until sausages are warmed through.
- Usually use a ham hock or ham bone, but alas, there was none to be found, so this became the not-so Senatorial bean soup.
- Good with pumpernickel bread and butter.
