Italian Egg Drop Soup (stracciatella)

- 2 eggs shopping list
- 3 Tbsp Parmesean cheese shopping list
- 3 Tbsp Italian flat leafed parsley, chopped shopping list
- 1/8 tsp nutmeg shopping list
- 1 Quart chicken stock (I use veg stock, homemade even better!) shopping list
- 3/4 cup cooked chicken, shredded (Leftovers work great!) shopping list
- salt & pepper to taste shopping list
- Note: Some fresh spinach would also be very good in this!!! shopping list
How to make it
- In a small bowl, beat the eggs.
- Add parsley, nutmeg, salt & pepper, mix well.
- In a pot, bring the chicken stock to a low boil.
- Pour in egg mixture, while stirring with a whisk.
- Add shredded chicken, stir.
- Lower heat, simmer for a couple of minutes, while stirring. After the egg forms ribbons, it's ready to serve!
- Serve with garlic bread and a green salad. Enjoy!
- ****NOTE: As my GR pal DetroitTokyo stated...fresh spinach would be awesome in this soup!!!
