How to make it

  • Place lasagna noodles in a large dish and cover with very hot tap water until pliable ( approx 25 mins). Drain noodles and set aside.
  • Brown italian sausage and when nearly done, add in celery, onion and mushrooms. Saute until tender,. Drain if necessary. set aside
  • Mix together ricotta cheese, 1/4 tsp nutmeg, parmesan cheese,. Season with salt and pepper as needed. Mix in egg.
  • In a saucepan, melt butter until foamy. Add in flour, stirring and cook for 2 minutes. Whisk in beef stock and half and half. Bring to a boil and cook for 5 minutes, until thickened,. Add in dash of worcestorshire. Remove from heat and stir in gorgonzola cheese until melted. Season sauce with salt and pepper and a dash of nutmeg.
  • To assemble: Preheat oven to 350.
  • pour 1/4 cup sauce in bottom of lasagna pan (or 9 x 13 dish). Thin sauce w/beef broth if necessary. spread over bottom of dish.
  • Layer 4 lasagne noodles, overlapping slightly in bottom of dish. Top layer of noodles with sausage mixture. Put 1/2 of butternut squash on top of sausage. Pour 1/2 cup sauce over squash. Sprinkle with 1/2 cup habanerno/cheddar cheese. Layer 4 more lasagna noodles on top of this. Add 1/2 of ricotta cheese mixture and top with 1/3 cup of pizza blend cheese. Add 4 more lasagna noodles, overlapping slightly. Press down all. Repeat layers. Place 4 lasagna noodles over top of last layer and pour remaining sauce over all. Top sauce with remaining cheese. (there may be a bit of sauce left over)
  • Cover with foil (spray underside of foil with cookin spray to avoid cheese sticking to it) and bake for 40 minutes. Uncover and continue baking until bubbly and top is nicely browned and noodles are tender. Let rest for 15 -20 minutes after removing from oven before cutting. Enjoy!!
