How to make it

  • Combine oats, chips, nuts and coconut in large bowl and set aside.
  • Beat butter and sugars together until smooth and creamy.
  • Add eggs, one at a time and mix well between each
  • Add vanilla and mix to combine.
  • Add flour, baking soda and salt and mix until just combined.
  • Add chips/nuts mixture and fold in until just combined.
  • Drop by tablespoons onto cookie sheets or baking stone and bake at 350 for about 8-10 minutes until golden brown around edges.
  • Cool slightly on stone then carefully remove to cooling rack to cool completely.

    Sounds great! I've been staring at that half bag of butterscotch chips for weeks now, trying to think of something interesting to do with them - same for the coconut and cinnamon chips! Have you been looking through my pantry? ;)
