How to make it

  • Slice tops off of tomatoes and scoop out seeds and flesh. Sprinkle very lightly with salt (optional) and place cut side down on paper towels to drain for about 5 minutes.
  • Meanwhile, mash avocado with lime juice. Stir in onion, garlic, cilantro, jalapeno (or powder) cumin, almonds, pepitas and chipotle chili powder. Season to taste with salt and/or pepper (go light on the salt if you salted the tomatoes)
  • Stuff tomatoes with guacamole, garnish as desired and serve.
  • Note: You can cut a very thin slice off the bottoms of the tomatoes if you're worried about them rolling around your serving platter. Or, slice some limes into circle and place one tomato on each lime slice - the little "well" at the center of the lime may be enough to keep them upright.
