Ingredients
  • Non Stick cooking spray
  • 4 cups sweetened oat cereal flakes with raisins
  • 3/4 cup quick cooking rolled oats
  • 1/2 cup all purpose flour
  • 1/2 cup snipped dried apples
  • 2 eggs, slightly beaten
  • 1/3 cup honey
  • 1/3 cup chunky peanut butter
  • 1/4 cup butter, melted, or cooking oil

Directions
  1. Preheat oven to 325 degrees; line a 9 x 9 x 2 inch baking dish with foil.
  2. Coat foil with non stick cooking spray; set aside.
  3. In a bowl combine cereal, rolled oats, flour and dried apples; set aside.
  4. In a small bowl stir together eggs, honey, peanut butter, and melted butter; mix well.
  5. Pour over cereal mixture; mix well.
  6. Transfer mixture to prepared pan.
  7. Using the back of a large spoon, press mixture firmly into pan.
  8. Bake for 28 to 20 minutes or until edges are browned.
  9. Cool completely on a wire rack.
  10. Cut into bars using a serrated knife.
  11. Makes 16 servings.

That does sound tasty - I never have time to make a decent breakfast before I rush out the door to work...this sounds like it's got lots of nutritional value. I'll have to give this a try - thanks Zen!

Alterations


I substituted Ancient Grain Kamut flakes for the sugared cereal and cold-pressed extra virgin coconut oil for the butter. Also, added some semi-sweet chocolate chips and doubled the peanut butter, to make it more like a treat bar.
It is awesome!
Next time, I'm going to try adding some nuts or granola, and maybe more dried fruit.
