How to make it

  • Preheat the oven to 350 degrees F (175 degrees C). Prepare a 9" round cake pan with cooking spray.
  • Saute onion, garlic, spinach, and mushrooms in butter.
  • In a large bowl, whisk together the eggs, milk, flour, salt, pepper, and baking powder until well blended. Add the spinach mixture and cheese, and stir to blend evenly. Pour into the prepared round cake pan.
  • Bake for 30 minutes in the preheated oven, until firm and golden. Cut into wedges, and serve warm or cold.

    My daughter, who doesn't cook often and lives in San Francisco while I live in Florida called me 8p my time the night before Thanksgiving looking for an appetizer to bring to her boyfriend's parent's house for the holiday....This recipe was on the front page so I e mailed it to her......She made it and instead of mushrooms added red peppers because the boyfriend doesn't care for mushrooms. She called today and says it was a huge hit. Now it's on my list to make. Thanks.

    I have made this recipe with swiss cheese before and though I loved it my daughters are not big swiss cheese fans so haven't made it again but with cheddar I know they would love it and I won't mind it either. Thanks for the light bulb effect and as soon as get out of turkey coma I am going to try this one.
