Russian Teacakes Mexican Wedding Cakes Recipe
Great X-Mas or coffe cookie! This are a big holiday tradition in my family.

Ingredients
  • 1 C butter
  • 1/2 C confectioners' sugar
  • 1 tsp vanilla
  • 2 1/4 C flour
  • 1/4 tsp salt
  • 3/4 cup nuts, finely ground

Directions
  1. Mix butter, sugar, and vanilla, thoroughly. Stir in flour and salt. Blend well, and add nuts. Chill until easy to handle.
  2. Heat oven to 400 degrees. Roll dough into 1" balls. Place cookie balls on ungreased baking sheet. (Cookies do not spread.)
  3. Bake 10-12 minutes, or until set, NOT brown. While cookies are warm, roll in confectioners' sugar. Cool. Roll in sugar again.
