Potato Salad

- 5 small-medium red potatoes, cleaned w/skin on shopping list
- 1/2 cup green onions, green & white parts sliced thin shopping list
- 1 cup celery, diced shopping list
- 2 eggs hard boiled, diced shopping list
- 4 slices bacon, cooked & sliced or crumbled shopping list
- 1/2 cup dill (fresh), chopped shopping list
- 2 tbsp mayo shopping list
- 1 tbsp Dijon mustard shopping list
- black pepper, cayenne pepper, and paprika to taste shopping list
- **Add red bell pepper for color & flavor - I can't eat them, but if you can they're a great addition to this recipe! shopping list
How to make it
- Place potatoes in a large pot and fill with water, just covering potatoes. Add some salt to the water and cook on high until water is boiling - check on potatoes and if they aren't soft enough continue to cook for several more minutes. Once potatoes are soft enough to be pierced with fork, remove from water and set aside to cool. Once cooled, cut into cubes and place in a mixing bowl. Add remaining ingredients and mix well. Season to taste.
