Monday Night Quickie

- 1 small onion (chopped) shopping list
- 2 stalks celery (chopped) shopping list
- 1 small green bell pepper (chopped) shopping list
- 1 pound of smoked sausage shopping list
- 1 pound peeled and cleaned shrimp ( i use small to med size shrimp) shopping list
- 1 can rotel diced tomatoes with green chilies(medium heat) shopping list
- 1 small can tomato paste (i think its 6 or 8oz?) shopping list
- chicken broth shopping list
- pepper shopping list
- garlic powder shopping list
- red pepper flakes shopping list
- cajun land seasoning (or any cajun seasoning) shopping list
- 1 bay leaf shopping list
- corn starch shopping list
How to make it
- saute chopped celery,onion,and bell pepper in about a tbl of oil. When soft add cut up sausage and lightly brown.
- add in can of Rotel tomatoes and take the can of tomato paste and put in container and mix a cup of chicken broth with it( you want it to have the consistency look of tomato sauce). Add to pan.
- Season with pepper,garlic powder,bay leaf, and cajun seasoning to taste. You can add the red pepper flakes if you would like a little more heat.
- Cover and let simmer for about 20-30 min.
- Last step, add the cleaned shrimp and cover and let cook for about 15 minutes till shrimp are pink and cooked through.
- You can add a little corn starch slurry to thicken if needed and give gravy a nice glossy sheen.
- Serve over steamed rice.
