How to make it

  • Preheat oven to 425 degrees Fahrenheit. Grease two large muffin pans, set aside.
  • Shred white cheddar and onion into a bowl, mix together with hands until thoroughly combined. Slice potatoes very thinly with mandolin. Layer the potatoes in a flower shape in the bottom of one muffin section, then add a thin layer of the onion/cheese mixture. Repeat, finishing with a last layer of potatoes. Brush top of each with olive oil & sprinkle with salt & pepper. Bake for 45 minutes or until golden. Serve warm as an appetizer or side dish.
