How to make it

  • Mix together the lemon zest, lemon juice, basil, oil and pepper. Pour over fish and let rest for 30 minutes.
  • Melt 1 tablespoon of butter in a large skillet over medium heat. Sauté the fish for 4 to 5 minutes on each side. If you have to do this in batches, you can add more butter to the skillet to cook the remaining fillets.

    Well, wouldn't you know it but it froze here the last two nights and killed my basil plant! So - no fresh basil. I had one little piece of cod so I cut the marinade ingredients in half and used one teaspoon of dried basil. I never cooked fish in butter before! This was really nice and lemony and I think the fresh basil would have made it a lot better. Put a bit more in IMI on 12/27/14.
