How to make it

  • Heat oil in large saucepan, over medium heat. Add rice, stirring constantly, until slightly browned and golden. While rice is cooking, sprinkle with garlic, cumin, oregano, and chile powder.
  • Stir in onions and cook for a few minutes, stirring constantly. Stir in tomato sauce, chicken broth, and water. Add salt, to taste. Bring to a boil. Reduce to low heat, and simmer for about 20 minutes until rice is tender.
  • This is a very mild rice, meant to accompany spicy main dishes. To make rice more spicy, if desired, add cayenne pepper, to taste.
