Easy Mexican Rice

- 3 tablespoons vegetable oil shopping list
- 1 1/2 cups uncooked, long grain rice shopping list
- 1 teaspoon granulated garlic (or 2 cloves chopped fresh) shopping list
- 1/2 teaspoon ground cumin shopping list
- 1/2 teaspoon ground oregano shopping list
- 1/2 teaspoon red chile powder shopping list
- 1/4 cup yellow onion, chopped very fine shopping list
- 1 (8 oz.) can tomato sauce shopping list
- 1 (15 oz.) can chicken broth shopping list
- 2 oz. water shopping list
- Kosher salt, to taste shopping list
How to make it
- Heat oil in large saucepan, over medium heat. Add rice, stirring constantly, until slightly browned and golden. While rice is cooking, sprinkle with garlic, cumin, oregano, and chile powder.
- Stir in onions and cook for a few minutes, stirring constantly. Stir in tomato sauce, chicken broth, and water. Add salt, to taste. Bring to a boil. Reduce to low heat, and simmer for about 20 minutes until rice is tender.
- This is a very mild rice, meant to accompany spicy main dishes. To make rice more spicy, if desired, add cayenne pepper, to taste.
