Mindless Meatball Minestrone

- 1 can (14oz or so) chicken broth, fat free if you want shopping list
- 1 can (ditto) beef broth, also ff if that's your thing shopping list
- 2 cups frozen mixed (or leftover) vegetables shopping list
- 1 can (14oz-ish) diced or stewed tomatoes, undrained shopping list
- 20 already-cooked meatballs, defrosted if frozen shopping list
- 1/2 cup small pasta, or spaghetti/linguini/angel hair, broken into 1 to2-inch lengths shopping list
- 1 can (15oz or so) kidney beans, drained and rinsed shopping list
- 1 tsp italian seasoning shopping list
- 1/2 tsp (or more) garlic powder or minced garlic shopping list
- 1/4 cup grated or shredded parmesan shopping list
How to make it
- Pour the 2 broths nto a dutch oven or soup pot, and place it over high heat. While it is heating, add the tomatoes, frozen vegetables, pasta, and meatballs. Cover the pot & bring to a boil, about 10 minutes.
- Rinse and drain the beans.
- When the soup is boiling, scrape any pasta that's stuck to the bottom of the pan,add the beans, Italian seasoning, and garlic.
- Reduce the heat to medium or medium-high, and simmer about 5 more minutes, until the pasta is tender and the flavors have blended.
- Serve immediately, garnishing each bowl with a tablespoon of parmesan.

I will have to try this ASAP. I never thought of mixing beef and chicken stocks, although I always mix either one with a veggie stock. Thanks for the post.

You should try the spinach in it, added at the end or before re-heating. My 8 yo niece would never eat it before, tried some of my Wedding soup and declared the "green stuff" as awesome. She was so surprised when I told her it was spinach...more
