- 1 large garlic clove shopping list

How to make it
For the meatballs:
- Preheat oven to 375 degrees Fahrenheit.
- Set out a large bowl and a small bowl. In the large bowl, combine ground turkey and balsamic vinegar, working together with hands. In the small bowl, combine bread crumbs and spices thoroughly. Form the turkey into balls, about 2 inches in diameter, and roll in bread crumb mixture. Place meatballs onto a baking tray covered in parchment paper. Bake on the second rack for 30 minutes or until golden brown.
For the veggies:
- In a heavy-bottomed pan, heat olive oil. Meanwhile, coarsely dice the onion, mince the garlic, and add to the pan. Chop cucumber into 1-inch pieces and halve the tomatoes, add to pan. Season with salt and freshly ground pepper. When onion begins to become translucent, deglaze the pan with a splash of white wine vinegar, and stir in feta cheese.
- Serve over a bed of lemon rice with pita & tzaziki.
