How to make it

  • For the meatballs:

  • Preheat oven to 375 degrees Fahrenheit.
  • Set out a large bowl and a small bowl. In the large bowl, combine ground turkey and balsamic vinegar, working together with hands. In the small bowl, combine bread crumbs and spices thoroughly. Form the turkey into balls, about 2 inches in diameter, and roll in bread crumb mixture. Place meatballs onto a baking tray covered in parchment paper. Bake on the second rack for 30 minutes or until golden brown.
  • For the veggies:

  • In a heavy-bottomed pan, heat olive oil. Meanwhile, coarsely dice the onion, mince the garlic, and add to the pan. Chop cucumber into 1-inch pieces and halve the tomatoes, add to pan. Season with salt and freshly ground pepper. When onion begins to become translucent, deglaze the pan with a splash of white wine vinegar, and stir in feta cheese.
  • Serve over a bed of lemon rice with pita & tzaziki.

    I really loved the flavor of the meatballs. however when we made it they turned out rather dry. I don't know why exactly... we cooked them at the temperature and time that you suggested and we put in the same amount of vinegar. It could have just been poor quality meat. It still tasted great and we will try it again sometime!

    The meatballs were really good! Moist, flavorful and quick and easy.
    I added some cayenne pepper, garlic powder and parmesean cheese to the bread crumbs. I am not very good at making meatballs and I will probabally make them like this from now on. thanks for sharing!
