Almost Paella

- 1/4 green pepper - finely chopped shopping list
- 1/2 medium onion - finely chopped shopping list
- 2 large garlic cloves - minced shopping list
- 8 shrimp shopping list
- 1 cup frozen peas shopping list
- 1 cup cooked quinoa shopping list
- salt and pepper to taste shopping list
- olive oil shopping list
- fresh parsley, finely chopped *optional- but good! shopping list
How to make it
- Using a nonstick skillet, add enough olive oil to cover the bottom of the pan.
- Add the onion, pepper and garlic.
- Saute until soft and translucent.
- Add the peas and a pinch of salt, stir well.
- When peas are soft and tender, add the shrimp and some more salt and freshly cracked pepper.
- Cook and stir until the shrimp are just turned pink and all teh ingredients are nicely incorporated.
- Turn off the heat and stir the cooked quinoa into the skillet.
- *to plate- remove shrimp with tongs, pour contents of skillet into a bowl and then arrange shrimp alongside grain and vegetable mixture. Sprinkle with chopped parsley.
