How to make it

  • Using a nonstick skillet, add enough olive oil to cover the bottom of the pan.
  • Add the onion, pepper and garlic.
  • Saute until soft and translucent.
  • Add the peas and a pinch of salt, stir well.
  • When peas are soft and tender, add the shrimp and some more salt and freshly cracked pepper.
  • Cook and stir until the shrimp are just turned pink and all teh ingredients are nicely incorporated.
  • Turn off the heat and stir the cooked quinoa into the skillet.
  • *to plate- remove shrimp with tongs, pour contents of skillet into a bowl and then arrange shrimp alongside grain and vegetable mixture. Sprinkle with chopped parsley.

    This was very good and very easy. I made it exactly as written except I used brown rice as I had no quinoa. It went together quickly for me especially as I had chopped up everything earlier in the day and had it in the refrigerator, ready to go when I got home and hungry for dinner. I thought I wouldn't eat it all, but I did. I didn't have any parsley either. Nice and easy and I will make it again. Added my picture. Thanks, softie! :)
