How to make it

  • Pour stock into large soup or stock pot.
  • Add greens, then water to cover.
  • Add hot sauce, liquid smoke and about 1/2 the salt/pepper
  • Heat over high heat til boiling.
  • Meanwhile, cook bacon til crisp and crumble.
  • Pour off all but about 4T grease(reserve for mushroom sauce used in previous mentioned recipe, if desired ;)
  • Add garlic and onions and cook over medium heat til onions soften slightly.
  • Add sparkling wine and honey and heat through.
  • Pour entire mixture into greens pot and lower temp to simmer.
  • Simmer about 30-40 minutes more, until greens are tender, but not mushy.
  • Add lemon juice and mix to combine.
  • Season with remaining salt and pepper.
  • Serve sprinkled with bacon crumbles(I also added french fried onions to the top at serving! :)
