Penne Chile

- 2lbs lean meat(bison, deer, elk, and maybe even chicken or turkey) shopping list
- 1 large onion, diced shopping list
- 3 cloves garlic, minced shopping list
- 2-4 fresh jalapenos, minced(deseeded, if desired) shopping list
- 28oz diced tomatoes(can use a Mexican or chili ready variety, if desired) shopping list
- 28oz red, kidney or chili beans, undrained shopping list
- 1/3 cup chili powder(more or less, depending on your tomato/bean seasoning....use half, then add more the last half hour of cooking, if needed) shopping list
- 1T quality paprika(I used smoked) shopping list
- 2t ground cumin shopping list
- 2t ground coriander shopping list
- 2t dried Mexican oregano shopping list
- 1T worcestershire sauce shopping list
- 1t liquid smoke shopping list
- 1/4 cup red wine vinegar shopping list
- 2-3T honey shopping list
- 1/2 bottle good beer shopping list
- 1 cup beef broth(reserve 2 more, if cooking pasta in the slow cooker, too) shopping list
- kosher or sea salt and fresh ground black pepper.... or, your favorite spice blend with pepper and salt :) Lots of tomatoes and beans, here... you'll need salt shopping list
- 1lb penne or similar pasta shopping list

- shredded cheese shopping list
- green onions shopping list
How to make it
- Dump all ingredients other than extra stock and pasta into lightly sprayed slow cooker... also, reserve about 1/4-1/2 of the amount the spices, in case more is needed, later. Spices sometimes reduce their strength while cooking in a slow cooker.
- Cook on low for about 7-9 hours, until meat is done. Taste, and add seasonings as desired.
- If you are cooking the pasta in the slow cooker, add that now along with the extra stock.
- Cook, covered on low for about 30-60 minutes, stirring often, until pasta is al dente. Add more liquid, if needed, as pasta absorbs it, but make sure to keep stirring. :)
- If you are cooking the pasta separately, do so, then add cooked pasta to the slow cooker and stir well.
- *If NOT adding uncooked pasta but chili looks too thin to mix well with the cooked noodles, then remove lid and let simmer in the slow cooker for about an hour. this wasn't a problem at all, for me, as the liquid, as described above, worked perfectly for cooking the pasta with the chili, but had I not done that, the consistency still would have been good. All slow cookers are different, though, as I've learned, so adjust accordingly!
