Pineapple Bars Recipe

Ingredients

Part 1

2 cups crushed pineapple

1 1/2 cups of sugar

6 tablespoons cornstarch

dash of salt

Part II

2 cups of oats not instant

2 cups of light brown sugar

2 cups of flour

1/2 teaspoon of salt

2 teaspoons of baking powder

1 cup of butter

Directions

Partially drain the pineapple. Blend all ingredients in Part ! together and cook until clear and thick stirring constantly.

Part II, combine all ingredients in a large bowl.

Put half of mix in bottom of 13 x 9 pan. Pat smooth

Spread pineapple mixture over top.

Top with other half of oat/flour/sugar mix.

Bake at 350 degrees for 30 minutes.

Cool and cut in small squares.

In it's own juice, not heavy syrup...all the sugar makes it syrupy enough.

Made these last night and they are wonderful! My husband is crazy for them. He's managed to eat about half of them already. I plan to make another batch to take to my Garden club gals to try on Monday...I'm sure they will be wanting the recipe. Thanks buddy!
