Pineapple Bars Recipe

Easy dessert bars, made with oats. Good for potlucks

Ingredients
- Part 1
- 2 cups crushed pineapple
- 1 1/2 cups of sugar
- 6 tablespoons cornstarch
- dash of salt
- Part II
- 2 cups of oats not instant
- 2 cups of light brown sugar
- 2 cups of flour
- 1/2 teaspoon of salt
- 2 teaspoons of baking powder
- 1 cup of butter
Directions
- Partially drain the pineapple. Blend all ingredients in Part ! together and cook until clear and thick stirring constantly.
- Part II, combine all ingredients in a large bowl.
- Put half of mix in bottom of 13 x 9 pan. Pat smooth
- Spread pineapple mixture over top.
- Top with other half of oat/flour/sugar mix.
- Bake at 350 degrees for 30 minutes.
- Cool and cut in small squares.

The crushed pineapple -- in heavy syrup or the pineapple's own juice? These make me think of Hawaii and sampling so many surprising pineapple dishes. Yum.

In it's own juice, not heavy syrup...all the sugar makes it syrupy enough.
