This is something my Mom made throughout my growing up years. This is served along side our meatloaf dinners. And I've never had a "written" recipe for this, so my servings are estimated.

Ingredients
  • 2 eggs, beaten
  • 1 can whole kernal corn
  • 1 can creamed corn
  • about 20 saltine crackers
  • salt/pepper
  • 1/4 cup milk
  • Topping:
  • 20-25 saltines
  • 4 Tbsp. butter, divided up into 1 Tbsp. pieces

Directions
  1. Preheat oven to 375 degrees.
  2. In an oven safe bowl, beat eggs.
  3. Add both cans of corn.
  4. Crumble the crackers into corn, add desired amount of salt and pepper, and milk.
  5. Stir to combine all ingredients, if it seems a little dry add some more milk.
  6. For topping, crumble the crackers all over the top, covering all of the corn.
  7. Place the tablespoon sized sliced butter in 4 different places of the crumbled crackers.
  8. Bake in 375 degree oven for 45 minutes.

Good old midwestern style corn pudding - good stuff!! Makes me want winter to arrive (well, maybe just the cooler Fall would be nicer...) I grew up on this dish, too - yum!

Have been making this for years and it is sooo yummy. I do add cheese to mine either American or velveeta.


Can i freeze this?


I have never had this, but it sounds good. I am going to have to try it. Thanks for sharing it with us.
