Another one of my mom's dinners. I like to use left over chicken from my roasted chicken dinner, but if I don't have any I will poach 1 or 2 chicken breasts, or even been known to be really lazy and use canned cooked chicken. No matter what this is... More

Ingredients
  • 1 large can (49-1/2oz) chicken broth, (if I've poached some chicken I use the reserved broth from that.)
  • 2-3 cups water(enough liquid to boil noodles in.)
  • 1 (16oz) bag Mrs. Reams Homestyle Egg Noodles (found in the freezer section)
  • 1 to 1-1/2 Cups cooked chicken, shredded or chunked. Use any left over chicken you have poached or canned.
  • salt/pepper
  • 3 Tbsp. butter

Directions
  1. In a large pot with the broth & additional water, cook the noodles according to package directions.
  2. While noodles are cooking, shred or cube the chicken.
  3. When noodles are done add the chicken, salt, pepper and butter.
  4. Heat through and serve over mashed potatoes or biscuits.
  5. The first night it will be more soup like, but kept in the fridge over night, it thickens up alot. If my husband wants it thicker the first night, he'll add some cornstarch to make it thicker.

This is indeed a very yummy soup. I make this quite often but in my recipe I start with a whole chicken and then debone it and shredd it toss it back in the pot with all that wonderful chicken broth that it has been cooking in and toss in the frozen noodles. OHHHH I can't wait for autumn when the weather is cooler to make this again. I've never had it over biscuits but almost always have biscuits on the side for dipping. I am going to try it over the biscuits the next time I make it. Thanks for posting and giving me a good idea.

Sounds perfect...my husband loves Mrs. Ream's noodles!

Mmmmm...mmmmm...GOOD! More comfort food!! I saw your poachihng chicken post so knew I had to come to this post for more info - sounds wonderful...I have to look for those frozen noodles - I had forgotten all about them, but now that you mentioned them, I'm reminded how fantastic they are!!

This is a great post......

Mmmm, mmmm, mmmm... enough said ;-)

I converted this to vegetarian, called it "Faux Chicken and Noodles", and my meat eating kids, their friends and my girlfriend, home sick with the flu, LOVED it.
Thanks!

Easy Vegetarian conversion... just sub marinated (with garlic and herbs) Tofu for the chicken, and use vegetable broth instead of chicken broth. I thickened the sauce a bit with milk and flour. Yum.
