Easy Creamy Cajun Shrimp

- 2lbs jumbo shrimp, peeled and deveined shopping list
- 1 large bell pepper, diced shopping list
- 2 scallions, diced shopping list
- 3 stalks celery, diced shopping list
- 2 cloves garlic, minced shopping list
- 14 oz can diced tomatoes(with chipotle, if possible) shopping list
- 1T adobo seasoning, if tomatoes aren't chipotle shopping list
- 1t Mexican oregano shopping list
- 1/2-2g Cajun or creole seasoning shopping list
- kosher or sea salt and fresh ground black pepper shopping list
- 1 cup half and half or heavy cream shopping list
- 4 cups cooked wild rice shopping list
How to make it
- Saute celery, pepper, shallot and garlic over medium heat until beginning to soften, about 10 minutes.
- Add shrimp and cook just until turning pink.
- Remove shrimp and set aside
- Add tomatoes, adobo sauce, oregano, Cajun seasoning and salt and pepper and increase heat.
- Cook at a high simmer about 10-12 minutes, until liquid is nearly all reduced.
- Add shrimp and cream and heat to warm through, finish cooking shrimp, and thicken slightly.
- Serve over wild rice with lemon or lime wedges and fresh cilantro, if desired.
