Citrus Tarragon Chicken

- 1/2 cup lemon juice shopping list
- 1/2 cup orange juice shopping list
- 6 cloves garlic, finely chopped shopping list
- 2 Tbsp vegetable oil shopping list
- 1 tsp ground ginger shopping list
- 1 tsp tarragon leaves shopping list
- 6 boneless skinless chicken breasts salted and peppered. shopping list
- 1 cup long grain white rice shopping list
- 3 cup chicken stock shopping list
- 1/8 tsp turmeric shopping list
- 1/4 tsp Chinese 5-spice shopping list
- 1/2 to 3/4 to 1 tsp garlic pepper shopping list
How to make it
- Combine first 6 ingredients. Pour over chicken. Marinate in fridge for 2 hours.
- Preheat oven to 350F.
- Drain chicken. Place in casserole dish.
- Spoon a little marinate over each breast.
- Bake chicken for1 hour basting at half hour mark.
- Boil remaining marinate for 1 minute then add 1 to 2 tsp corn starch dissolved in a little water to the marinate to thicken.
- Simmer rice in stock and remaining ingredients for a half hour.
- Serve 1 breast over a bed of rice. Spoon sauce over chicken.
- The chicken can be broiled or grilled if you like.
