How to make it

  • Combine first 6 ingredients. Pour over chicken. Marinate in fridge for 2 hours.
  • Preheat oven to 350F.
  • Drain chicken. Place in casserole dish.
  • Spoon a little marinate over each breast.
  • Bake chicken for1 hour basting at half hour mark.
  • Boil remaining marinate for 1 minute then add 1 to 2 tsp corn starch dissolved in a little water to the marinate to thicken.
  • Simmer rice in stock and remaining ingredients for a half hour.
  • Serve 1 breast over a bed of rice. Spoon sauce over chicken.
  • The chicken can be broiled or grilled if you like.

    Really nice post. I'll use duck but, maybe that's good. Really like the flavor combo. Got some homemade chicken stock in the pantry, that is seriously rich. Thanks. RJ

    That sauce is right up my ally. I just love tarragon and miss my plants in the garden. Bookmarked to make up some of that dressing. It obviously goes well with chicken and I'm also thinking tossing in shrimp or even as a salad dressing. Outstanding condiment.
