Blackened Chicken

- 1/2 c buttermilk shopping list
- 2 tsp cayene pepper shopping list
- 1-1/2 tsp salt shopping list
- 1 tsp black pepper shopping list
- 2 tsp oregano shopping list
- 2 tsp thyme shopping list
- 2 tsp paprika shopping list
- 2 Tbs parsley leaves shopping list
- 7-8 lbs chicken parts shopping list
How to make it
- Combine buttermilk,herbs and spices in food processor. Process til parsley is finely chopped.
- Put chicken in large bowl and pour buttermilk mixture over it. Turn chicken ,cover,refrigerate at least 6 hours,turning 2 or 3 times
- Heat broiler and arrange chicken in large roasting pan. Broil chicken until skin blackens and juices run clear when meat is pierced,about 30 to 40 mins. Baste chicken with marinade every 10-15 mins and turn twice during cooking..

I used the marinade for oven fried chicken. I marinated as instructed and then dredged the chicken in bread crumbs. I baked it at 350F for one hour and flipped once after 20 minutes, again after another 20 and then again for the final 20. Really de...more

I didn't follow your cooking instructions, Pleclare, but did use the same marinade and it was definitely one that I'd recommend and make again. :)
