Blackened Chicken

    For some reason I didn't think I'd care for this but I wanted to make it anyway, lol! I cut back on the thyme, since I don't normally care for the dried version. I used a sweet paprika, and chili powder instead of cayenne, since it's less spicy. I baked this in the oven at 350 for about 35-40 mins, then finished it off in the broiler, about 5 minutes to get that crispiness on top. Entirely cooking a meat in my broiler scares me...it cooks super high. So end result we loved it, so much flavor and I think this seasoning would be great on a pork chop too! Another good one left by Pleclare :)

    I think that buttermilk marinade would be great on fried chicken. Or oven fried chicken. :)

    I think the 7-8 lbs of chicken must be a typo. :-) She must have meant 7 to 8 pieces although I don't know how 1/2 cup of buttermilk could work for that much chicken. I barely had enough for the four thighs I used, although they were a bit large.

    Lol, I never even notice it said 7-8 lbs chicken! I guess I just right off read 7-8 pieces. I had 5 small thighs when I made this and had the perfect amount of marinade, so I guess your right that it wouldn't have been enough for 8 pieces.
