Blackened Chicken

    Blackened Chicken by Pleclare

    While I made the marinade according to the recipe, I only had boneless, skinless chicken so just quick pan sauteed them instead of cooking under the broiler as in Pleclare's instructions.

    The chicken was moist, tender and full of flavor, although I must admit that my photo is rather lacking as it doesn't look too much like "Blackened Chicken."

    I don't often have buttermilk "in stock" but the next time I do I'll definitely make this marinade again.

    Well, the photo for the recipe doesn't appear to be OF the recipe... it's from a blog, and there's no addition of buttermilk, or a marinade, it's only dry spices, which is common for "blackened"... so, that much liquid will certainly do exactly what your photo showed.... you just won't get that blackened look with all that buttermilk and marinating... you'll get a tasty dish, obviously, just don't let the photo difference make you think you did anything wrong. :)

    I thought that the chicken in the recipe photo looked very delicious, but no, I didn't expect mine to turn out that way. I wasn't using chicken with skin and my cooking method wasn't the same... But I did think the marinade was very tasty and I'd make it that way again.

    When I did mine,it was not as dark as the photo but very close. Used chicken with bone and skin and put under broiler...
