How to make it

  • Beat butter with sugar until light and fluffy.
  • Add eggs, one at at time, beating well between each.
  • Add vanilla and mix, well.
  • Combine flour, baking powder, salt and baking soda then add that alternately with the limeade, mixing slowly and scraping sides of the bowl(do not beat)until all is added.
  • Fold in coconut.
  • Spoon into papered muffin tins(I like to fill them nearly to the top to get a nice full cupcake :)
  • Bake at 350 for 20-23 minutes, turning once. (for both pans, I baked for 12 minutes, turned, and baked for 10 more, and they came out perfectly)
  • Let cool in muffin in for about 5 minutes, then remove to cooling rack. See Photo
  • Continue with remaining batter. (mine made 20 full cupcakes)
  • Let cool completely before frosting, if frosting :) See Photo
  • For Coconut Lime Frosting

  • Combine butter, sugar and vanilla with enough milk to reach desired consistency, by beating well.
  • Add lime zest and mix thoroughly.
  • Add colored or toasted coconut, jelly beans or other Easter candies, if desired :)
