Lemon -sage Chicken

- 4 boneless,skinless chicken breast halves shopping list
- 3 eggs ,beaten shopping list
- 1/4 c grated Parmesan and Romano chesse blend shopping list
- 1 TB minced,fresh parsley shopping list
- 1 tsp dried basil shopping list
- 1/2 tsp salt shopping list
- 1/8 tsp pepper shopping list
- 1/2 c flour shopping list
- 2 TB olive oil shopping list
- Sauce: shopping list
- 2 TB chopped shallot shopping list
- 3 garlic cloves,minced shopping list
- 1/4 c white wine shopping list
- 4-1/2 tsp lemon juice shopping list
- 1 TB minced,fresh parsley shopping list
- 1 tsp dried sage leaves shopping list
- 1 tsp grated lemon peel shopping list
- 1/2 c heavy whipping cream shopping list
- 3 TB cold butter,cubed shopping list
How to make it
- Flatten chicken to 1/2" thickness. In a shallow bowl,combine eggs,cheese,and seasonings. Place flour in another bowl. Coat chicken with flour,then dip in egg mixture.
- In large skillet,brown chicken in oil in batch. Transfer to greased 15x10" baking pan. Bake,uncovered,at 375' for 15 to 20 mins or till thermometer reads 170'
- In the drippings,saute shallot till tender. Add garlic;cook 1 min longer. Add the wine,lemon juice,herbs and lemon peel;cook over med. heat until liquid is reduced by half. Add cream;cook until thickened,stirring occasionally. Stir in butter till melted. Serve sauce with chicken.

This was so good! The breading on the chicken is fantastic on its own! You REALLY need the 3 eggs or you'll run out of batter since it's so thick. The sauce is AMAZING!!! The refreshing lemon taste is great! Thanks! My IMI review more
