How to make it

  • In large bowl, combine catfish, potatoes, peppers, shallot, jalapeno and ham. See Photo
  • Melt butter in dutch oven or similar pan(I used cast iron)
  • Add catfish/veggies and carefully toss to coat.
  • Let cook over medium heat for about 5 minutes, stirring often.
  • Meanwhile, whisk together remaining ingredients. See Photo
  • Pour half and half mixture into dutch oven and stir.
  • Cover and let steam/cook about 7-10 more, stirring often, just until catfish is opaque and flaking and veggies should be tender, and all warmed through.
  • Serve immediately with lemon wedges, if desired.

    This is cool because I have no clue how to make catfish. I will eventually try this, but for now, it's on my list.

    Like a super thick chowdah! I love it. Catfish has always been a hard fish to cook for me. I'll have to try this one.
