You Should See The One That Got Away...

- 6T butter(can use half butter and half olive oil) shopping list
- 2lbs catfish fillets(so cleaned, deboned, etc), cut into bite sized pieces shopping list
- 3 baked potatoes(can be left over, grilled, baked, whatever... just make sure they are cooled), cut into bite sized pieces(peeled or unpeeled, it's up to you :) shopping list
- 2 bell peppers, chopped shopping list
- 2 large shallots or 1 small sweet onion, diced shopping list
- 1-3 jalapeno peppers, minced(seeds/ribs are up to you :) shopping list
- about 1/2lb ham(steaks, or leftover from a whole cooked ham, etc)* , cut in bite sized pieces shopping list
- 1 cup cream or half and half shopping list
- 1-3t cajun seasoning shopping list
- 1T fresh dill weed, minced or 2t dried shopping list
- 3T whole grain mustard shopping list
- 1 lemon, juiced shopping list
- kosher or sea salt and plenty of fresh ground black pepper shopping list
- *if ham is not available, or you don't want to use it, add a dash of liquid smoke to half and half mixture. shopping list
How to make it
- In large bowl, combine catfish, potatoes, peppers, shallot, jalapeno and ham. See Photo
- Melt butter in dutch oven or similar pan(I used cast iron)
- Add catfish/veggies and carefully toss to coat.
- Let cook over medium heat for about 5 minutes, stirring often.
- Meanwhile, whisk together remaining ingredients. See Photo
- Pour half and half mixture into dutch oven and stir.
- Cover and let steam/cook about 7-10 more, stirring often, just until catfish is opaque and flaking and veggies should be tender, and all warmed through.
- Serve immediately with lemon wedges, if desired.
