Grilled Halibut With Lemon And Parsley

- 4 (5 ounce) halibut steaks shopping list
- 1/4 cup fresh lemon juice shopping list
- 1/3 cup extra virgin olive oil shopping list
- salt and freshly ground pepper, to taste shopping list
- 1/3 cup chopped parsley, preferably Italian leaf shopping list
- red pepper flakes, to taste shopping list
- 2 tablespoons unsalted butter shopping list
How to make it
- In a glass dish, combine the oil and lemon juice, season with salt and pepper; add the fish, cover and marinate in the refrigerator for 1 hour, turning once.
- Oil the grids of the barbecue or a ridged grill pan, heat over high heat until hot. Meanwhile, combine the chopped parsley, red pepper flakes and butter in a microwave safe measuring cup; microwave until the butter is melted. Add the marinade from the fish and mix well.
- Place the halibut on the grill and cook, basting with the marinade; turning once, until just opaque. Discard any unused marinade.
- Per Serving: 332 Calories; 23g Fat (6g Sat, 13g Mono, 3g Poly); 30g Protein; 2g Carbohydrate; trace Dietary Fiber; 61mg Cholesterol; 347mg Sodium.

I made this over the weekend. I used 1.75lbs of fresh fillet. I grilled skin side only fearing it would fall apart trying to turn it over. I thought it turned out perfect. Served with brown rice and mushrooms. more
