- 2 1lb sourdough or similar baguette bread shopping list
- 1lb premium deli roast beef shopping list
- 3 medium vine ripened tomatoes, or romas, sliced shopping list
- 1 red onion, sliced thin shopping list
- 8oz smoked or chipotle Gouda cheese, sliced shopping list
- sliced pickled pepper rings(sweet or hot, your choice) shopping list
- 1 avocado, pitted and sliced shopping list
- 2 cups bitter greens shopping list
- olive oil(if desired) shopping list
- cilantro olive Mayo(below) shopping list
cilantro olive Mayo
- 1 cup mayonnaise shopping list
- 1T chipotle or other spicy mustard shopping list
- 2T olive pesto, tapenade or other similar spread shopping list
- 2T fresh cilantro, roughly torn shopping list
How to make it
For Cilantro Olive Mayo
- Combine all ingredients and let set in the fridge while slicing/preparing rest of the sandwich.
To Assemble
- Slice both loaves in half, horizontally.
- Lightly spray/drizzle cut sides with olive oil, if desired, and toast in a 250 oven for about 5 minutes.
- Layer with cheese on the bottom half, then folded slices of beef, then onion, tomato, avocado, salt and pepper and pepper rings.
- Slather the cilantro mayo over the top half, then add a few leaves of the bitter greens.
- Put the top on, and cut in sections to serve.... with napkins! :)
